Avocado Salad

I attended book club at my friend Lisa’s house and she served this yummy dip/salad.  I loved it and had to get the recipe.  I decided it would be a perfect addition to a baby shower lunch I was giving.

Here it is with all the other delicious food.  It’s healthy and effortless to make.  For me, it’s always a win when something tastes good and is simple to prepare.  After the shower, everyone was asking for the recipe just like I did. Enjoy!

Avocado Salad

Instructions

  1. 3 cucumbers diced 

    1 container cherry tomatoes cut up

    1 red onion

    2 avocados diced

    1/2 cup feta cheese

    Dressing:

    1/3 cup extra virgin olive oil

    1/3 cup red wine vinegar

    1 teaspoon sugar

    Salt and pepper to taste

    Mix in a blender or food processor 

    Serve with cut-up pita bread or pita chips
