Dinner in a Pumpkin

One of my favorite Halloween traditions is to make dinner in a pumpkin.  The idea was shared with me over twenty-five years ago. Dinner in a pumpkin and pumpkin chocolate chip muffins have become a part of what our family likes to eat at Halloween time.

Over the years I have made many changes to the recipe.  People have asked for the recipe, and I didn’t have it written down.  I decided to write down exactly what I do.

You hollow out a medium-sized pumpkin and fill it with the mixture above.  It’s very simple and a favorite of everyone in my family.  I’m planning to add more pictures tonight after the dinner is cooked.

Ingredients

  • 1 package (1 1/2 lbs) ground turkey I like to use the Foster Farms ground turkey from Costco
  • 1 medium onion diced
  • 1 13.25 oz can or 1 1/2 cups fresh mushrooms cut the mushrooms into bite size pieces
  • 1 8 oz can sliced water chestnuts cut the slices in four bite size pieces
  • 2 10.5 oz cans Campbell's cream of mushroom soup
  • 2 tbsp soy sauce
  • 4 cups cooked rice I like to use asian sticky rice
  • 2 cups Mexican-style grated cheese
  • 1 medium hallowed out pumpkin

Instructions

  1. Brown the ground turkey, onion, and mushrooms in a skillet, salt and pepper to taste.  While you are browning the ground turkey, cook the rice in a rice cooker or on the stove top.  I usually make 4 cups of uncooked rice and I adjust the rice in the recipe to get a good consistancy.  When these steps are done, in a large bowl combine the meat and vegies with the four cups cooked rice, add the water chestnuts, soup, soy sauce, and cheese.  mix it all together and load into to a medium sized hallowed out pumpkin.  Bake at 400 degrees for 2-3 hours or until the pumpkin is tender.

Recipe Notes

Everything that is put in the pumpkin is already cooked, so you don't have to worry about it being cooked.  Basically you are cooking the pumpkin and warming the ingredients inside.
